Roasted Potato Thins



This is just a really simple dish. I mean, it’s simple as in the ingredients are simple. Preparing the potatoes and roasting take a while. But it’s really worth it. They’re extremely tasty and take on a nice crispy-on-the-outside-soft-on-the-inside texture.

I don’t really have a recipe. They’re that simple. Basically you just slice the potatoes really thinly (a mandolin would be great for this, but I don’t have one and did it by hand). Coat the slices in a bit of oil or butter and arrange the slices in a cast iron pan (the cast iron gives a really nice crisp… in fact most metal pans do, so I would recommend a metal pan for sure, but cast iron is the best in my opinion). Slot in some thinly sliced onions (or shallots) and garlic between the potato slices, sprinkle on some salt and pepper and other desired spices (like rosemary or sage) and pop them in a 425°F oven. Roast until the potato slices are soft (mine take about 45 minutes) and the desired crispiness is achieved.

Vegetable Fried Quinoa



Vegetable fried QUINOA. I was like, this is a freaking’ innovation. I like eating quinoa as much as possible, because it’s really healthy for… well, everyone, but especially for vegetarians. It’s a complete protein, unlike rice (which is what’s normally vegetable fried), so it’s a great part of every vegetarian’s and every person’s diet. Cinnamon Sugar Doughnut Muffins



I really love muffins. You can see that by looking through my older posts. They’re easy, they’re tasty, they’re portable… you can’t lose! A late introduction…

I realize that I have a bunch of new followers who have no idea what the deal is. So here we go:

I’m Cathlin. 24. East to West transplant. BAH. Photography student. Life-long vegetarian. Food/eating enthusiast.

I love cooking and I love baking even more. I make it a goal to find recipes that are on the healthier side or to modify them so they are. But every now and then, you just have to eat a cake made with lots of butter, and frosted with some good old butter and sugar whipped together.

I photograph my cooking/baking adventures in steps and usually post photos of each step so that if you attempt the same recipes, you can see what everything should look like. Being that I’m a photography student, I try to take relatively nice photos, but some days I’m just off. Some times the light sucks. Some times I just don’t care.

Most of my recipes and posts will be vegetarian. Some will be vegan. Even fewer will feature meat of any kind, but I do make meat dishes every once in a while for my man.

I love answering questions, reading comments and receiving suggestions, so please feel free to be in touch and let me know what’s on your mind!

Whoa…

Ok. So, I moved all my posts here but of course Tumblr doesn’t seem to have way to truncate long posts. Most of my posts from my old blog are pretty old, so hopefully they’re not just clogging up your Dashboards right now - if they are, I’m REALLY sorry!
I’m going to work on finding a way to truncate these beasts and we’ll be back in business.
